Mikes world famous salsa!   (more of a pico de gallo but good whatever you call it)
 

The secret to making this taste awesome is really in the cutting and choice of ingredients.  Get the best tomatoes you can find, and the freshest vegetables you can find.  I use regular tomatoes usually, but romas work well too.  I have tried every gizmo, but nothing beats a quality SHARP knife for mincing the ingredients as small as possible.  Cutting machines mess up the flavor for some reason.

4-5 cloves garlic

3 lbs tomatoes

1 bunch of green onions

1-2 bell peppers

3 jalapeno or habanero pepper

1 half bunch of cilantro

Kosher salt

pepper

juice of one half lime

 

Mince garlic first, then mince tomatoes on top of the garlic.  Mince onions and peppers and then mince the jalapenos very fine, big chunks are bad.  If using habaneros, CAREFULLY mince as fine as possible and be careful what you do with your hands afterwards.  Don't add all jalapenos/habaneros, add them in stages until you get the heat you want on the mixture.  Slowly add kosher salt while you mix to get the right flavor.  Add some pepper on top and some lime juice for the final touch.  Enjoy!

 

 

Jeffs bad-ass creamed corn

My friend Jeff gave me this recipe, great with thanksgiving dinner!

 

32 oz frozen corn

12 oz heavy whipping cream

12 oz whole milk

1 1/2 tsp salt

Pepper (to taste)

9 tsp sugar

3 tbsp melted butter

3 tbsp flour

Bring  all ingredients except for butter and flour to a boil then simmer for 5 minutes.  Melt butter and mix with flour to create a paste, then slowly stir into corn.
